Here is a list of some spring vegetables you shouldn't miss out on when in Ningbo:

Bamboo shoots 

Farmers have recently been busy harvesting bamboo shoots in the city's Fenghua district. 

In September of last year, Xikou, a town in Fenghua, made a list of towns known for their bamboo plantations released by the Chinese Forestry Association.

Official data shows that Xikou is home to 102,000 mu (6,800 hectares) of bamboo forest. 

The bamboo shoots are typically harvested in March.

Raw bamboo shoots dug from the mountains are hand-carried by workers. Local villagers will cut off the bamboo shells in order to reduce their weight. 

The village's bamboo shoots taste fresh, tender, and sweet without the aid of any seasoning. 

Braised bamboo shoots and roasted bamboo shoots with pickles and pork are popular dishes in the city. 

When a large number of bamboo shoots enter the market, they will be pickled, roasted or air-dried for long-term storage.
